SWEET POTATO SOUP

Ingerdients:
- 3-4 medium sized fresh sweet potatoes
- 1 bigger leek
- 1 Tbsp of olive oil
- 1-2 tsp of curry powder
- 1 bay leaf
- salt, pepper
- about 1 liter of water + 1 vegetable soup cube / 1 Liter chicken broth (or vegetable)
- 1 dl of rice milk / ricecream
Caramelized the choped onion on the olive oil, add the chopped sweet potatoes, the herbs, the vegetable soup cube and add around 1 Liter water.
Cover it and cook it on low/middle heat for a 30 minutes.
After 30 minutes, remove from heat and purée with an immersion blender, add the rice milk and purée again until smooth. Put it back and boil it for a 5 minutes.
